    Stumbled upon your site while looking for some information on smoking. Am a smoking noob with only a butt and whole chicken to my credit. The butt came out AMAZING, smoked the butt for 4 hours using charcoal and combination of hickory, apple and cherry. Then wrapped and in oven till done....about 9 hours in total time. Also applied a vinegar based mop every hour. 8lbs all gone with 12 people eating!! Attempted a whole chicken, 8lbs. Brined it, removed backbone and used apple and cherry. On for 4 hours.....think it was a bit too long, but tasted great!! My equipment is the weber kettle.
