Hi everyone

  1. Well. I thought I posted my info here but don't see it so here's a repeat.

    Started smokin' way back in the 80's with a Brinkman water smoker. Got me an OK Joe wood roasting over with an offset firebox in '91. Rented the kitchen in a local pub for a little over a year(dropped that in April) and bought a SmokinTex electric . I'd like to try competitions next year.

    welcome saxman- i'll haveto go check out that link & i haven't caught a muskie yet- i'm an offshore guy landlocked here. but anyway welcome to smf- remember we love the Qview ( pics of yer family,cooks, gigs, etc. )

  8. The owner of a pub out here got tired of the hassle involved with running the kitchen. I paid him a monthly rate and all things concerning the kitchen were mine to deal with. Menu, Supplies, Hours, everything. It was fun but having a full time job and the kitchen kinda drained me and my girlfriend. We generated enough revenue to pay the bills and an employee. Darn! Folks just didn't come in there to eat - no history of decent food. I did pulled pork, brisket and ribs and got rave revues but it just wasn't the type of place for what I wanted. Next time I'll get it right, learned a lot! Cooked up a halftime buffet for 150 people for the Superbowl! Came a long way in a year's time.....
