My name is Paul, and I'm a retired structural engineer from Colorado. I use a Bradley Original Smoker, and I've had nothing but excellent results with it.  I'd like to, um, upgrade? to a stick burning, horizontal reverse-flow unit, but, frankly, I've had such a good experience with my Bradley, it's hard for me to justify spending the money.

I typically smoke once a week, usually just for my wife and me, which makes the Bradley ideal.  75% of my smoked meat is pork.  Occasionally, we'll do some fish or a small brisket.  This unit starts fast, the smoke fuel costs only about a quarter apiece, and it's easy to smoke only a couple racks of ribs, or a smallish shoulder.  I like to mess around with different rubs, but, due to only using a Bradley, I consider myself at a moderate experience level because, in addition to the Bradley, I've used my buddy's conventional offset smoker several times, with excellent results.  Frankly, I normally just don't have the ability to spend all day messing with a smoker, much though I'd like to.  I always have way too much going on, on a Saturday, to hang around the smoker, drinking beers with my friends.  So, my dream of owning and operating a unit like a 48" Lang is probably just a dream.

That's it.  I've found lots of cool new stuff here on this site, and look forward to really burrowing into it in the future.

Happy Smoking!

Paul
