help with offset smoker

  1. Hey everyone i am fairly new to this forum. I have been using a Master Built electric smoker for a couple years and have had good success with it. So I took the Plunge and bought  a Char Griller Duo smoker and added the smoker box to it. I have used it a couple times and had decent luck with it. But this past weekend i had a slab of baby backs and tried to use the bigger smoker to try and see if i could make it work. Well after about an hour i said screw it and put them in my master built and gave up on the offset. 

    No matter what i did i could not get the Temp up over 200. I tried less air flow, more air flow, some dry wood and soaked woods. I used logs and chucks, charcoal starter on the bottom. But I had plenty of very think dark smoke and couldn't get the temps up. I need some help.....
     
  2. Hello.  What we need is pictures of your entire process from the point you build a fire.  That's about the only way to answer your questions.  I do hope you were not relying on the factory therms in your lid.  They are usually way off.  Keep Smokin!
