Hey all,

Went to get my brisket yesterday but they were all out of the full packer :( So they sold me this pallete of beef, said it is cut from the brisket??? Looks good and has nice fat running through it, so my question is, do I treat it as a brisket when I smoke it? I got 2 pieces about 2 pounds each.

Help, never even seen this cut of meat before.

I know this is old but since nobody answered you, I think Palette de beouf is closer to chuck roast (My Wife actually grew up in Laval so asked her.) 2lb pieces would be tough to smoke, I think it'd be easier if you were able to get bigger pieces.
