Help - Mes 40 temp and Maverick are 40 degrees off

Do i go by the maverick and crank up my MES to hit 225 when the mav reads it out or leave it around 235 since my mes is usually 10 degrees off on small smokes?

I am smoking 6 racks of ribs 2 whole chickens and a boston butt so its a little cramped and i plan to throw some wicked baked beans in, in a bit.
 
Redrum, morning..... Knowing what the actual smoker temp is, make a chart to reflect the displayed / actual temps....   Most folks assume the temp setting on their oven is correct and never bother to check it... those that do, adjust for the real temp...    Dave
 
I am curious about this as I have been having the same experience. Without meat my MES and Mav are within 10 degrees with MES set at 275. The last 3 smokes I did, one with 2 racks of ribs, one with 2 small pork butts, and one with 2 small chuckies, I had to crank the MES to 275 to get the Mav temp to 240. But in all 3 cases the meat cooked way faster than I thought it should considering a temp of 240. The only thing I can think of is the Mav probe is being affected by the presence of meat and I'm actually smokeing at the higher temp. Let us know how your smoke goes.
