For future cooks...Once foiled, moisture is locked in. You can stay in the smoker or go in an Oven at 325° and the pork will be done very quickly, without loss of quality...JJ
That looks good. 11 hours is not bad for 4.5 lb boned, rolled and tied. Contrary to some popular posts, I have found when smoking at 225 to 250°F you can count on going 2 hours per pound 99% of the time. Some go faster or a little longer. You need to relax, this stuff is supposed to be fun...JJ
