Hello! New smoker here.

  1. My names Matt, I'm from the central MA area.  I'm new to smoking meats. My amazing fiancé bought me a Weber Smokey Mountain 18.5 for Christmas and we've been using it a bunch ever since. I've been looking through this site a lot since we started smoking meats (whenever i'm curious about something) and thought it was about time i created an account.  Looking forward to learning more about the hobby. Since we started I've bought a ton of popular rubs to see which ones i liked so i can know what i'm looking for when i make my own. So far my challenges are achieving that "bite through" skin on chicken (even at high temps it seems chewy), getting the right texture on my ribs (I'm getting better), and now working on brisket...

    Matt, welcome to SMF!  Sounds like you are taking a great approach to finding what works best for you.  Keep at it and you'll have it perfected in no time flat.

This forum has been around for over ten years, so there is a good chance that any questions you may have, have already been answered (they may have 10 different answers, but you'll get an instant response non the less).
