Well I'm new to smoking, about a year I have done just Ribs. And everyone has loved them so makes me want to smoke more. I use a Smoky Hollow 38inch Vertical smoker and love it... Looking to do some custom work to it to just make it my own. Like a smokestack. Any info or ideas?? Going to be doing some brisket soon I hope... I like to use Smoky sweet rubs. Working on my own now. And I'm a Carolina Sweet kinda guy!!!! Last set of ribs I used some Apple Wheat Beer and OMG so good!!! Love this Forum!!! If anyone has tips and tricks for the Smoky Hollow feel free to share!!!

Smoky, welcome to the site from CNY.

I also like dry rubs but more savory than sweet.

I've told folks for years that sauces and glazes were for folks trying to hide mistakes but last week that changed.  The Boss (AKA Nancy) likes sauces and glazes and we both like Carolina style mustard based sauce on pulled pork.  So, I used the search feature that you've already been guided to to find a sweet NC glaze/sauce for some local young pasture raised pork ribs and hit one out of the park.

I won't say which one 'cause that would spoil the fun for you.

Good luck and again, welcome.
