Hello from the great (kinda) white north!

    Well since I've been told twice now I won't stall any longer. Hello all from Northern Minnesota. We're having a bit of a heat wave, 40*, so the snow's melting and I'm trying out my new smoker. Santa was good to me and brought an electric Smoke Hollow smoker. I'm new to smoking but grill about 3-4 times a week year 'round. I use a charcoal weber kettle grill at home and a basic Char-grill propane grill at work. (I know, cool boss!) I'm excited to get into slow and low cooking. There's nothing like sitting around the fire and watching meat cook while having a cold beverage. Well, I'm sure I'll have more questions for everyone soon.

    Ok, here's a quick starter question. I've heard hard boiled eggs were great smoked. Anyone try one?

    I guess I should add what I'm interrested in cooking. I had good luck in the woods this year so I have 6 deer in the freezer. I hope to smoke a bunch of venison backstraps. I've tried a friend's and it was awesome. Not sure exactly how he does it other than he brines it and serves it like an appetizer. It's well done and almost like a moist jerky. For a party he did some venison and some turkey and served it mixed together as an appetizer. Looked kind of neat with the color contrast between the two meats. I'll have to try that as well.

    I also want to want to try turkey, chicken, and ham. Got a small pork shoulder in as I type. I tried venison summer sausage and brats last year and will do them again. They were alright but I needed more fat in them and the friend I had smoke them might have left them on a bit long so we'll try again. Can't expect perfection on the first shot.

    Anyone have a good way to hang summer sausage in their smoker without spending a bunch on money on a fancy hanger? I'm thinking of getting some small "S" hooks to hang from my top rack to catch the loops on the casings. Any concerns about hardware store hooks as long as they are not galvanized? Thanks for any input you all have.

    For hanging summer sausage I purchased square hardwood dowels and cut them to fit on the shelf brackets then just loop the string on the summer sausage casing over the dowel. Works well for me and quite inexpensive.

    Welcome to the site. Glad you found us. NOt sure on those eggs though. Never tried them.
    Someone I am sure has heard about it or done it.

    welcome to the site..in reference to the hooks--maybe change strategy and use stainless wire instead..just a thought...
