Hello all. I live in Lashburn, SK, about 8 hours straight north of the 49th parallel, on the Alberta/Sask border. I enjoy racing, motorbikes, off-roading and hiding out in my garage.

Thought I should finally find a forum on smoke and start to sharpen my novice skills. Nothing beats a forum for great info. I have been cooking this way off and on for about a year. In the last few months I have really stepped it up and been doing it way more often, to the liking of my family and friends.

I own a propane Weber Genesis grill that I use to smoke with, besides regular bbq duties. I have been trying to convince the better half to allow a Traeger in the backyard...I think I am getting closer

As far as what I smoke, I enjoy combining rotisserie and smoke. I make my own rubs and sauces as well. I cook the usual meats as well as moose, deer, elk and want to try game bird and fish.

First off welcome Sask to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Welcome from Colorado!! I get up to Yellow Knife a couple of times a year. They do some serious smoking up there. BTW. You will love the Traeger. I can't say enough about mine.
 
Thanks for the greetings guys. My wife always harassed my about taking pics of my meats. Then I showed her this site....all she said was 'OMG there is more of YOU!!!)

I am trying something new tonight. I marinated chicken breasts with a spicy eastern sauce (with my add-ins, I can't leave anything alone) then stuffed them with curry-rice/veggies and cream cheese. Wrapped in bacon and have them smoking right now on the rotisserie with a blend of cherry wood and apple pellets. I use foil packs on my weber grill. I will post some Qview here shortly.
 
I hope this works out. I am cooking for 2 hrs at about 275F...but I am starting to think I should go 2.5 hrs. The chicken is quite thin tho.

How to post Qview to Forum:

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Everyone here enjoys seeing the Qview so be sure to post plenty of pics...

Large ones that us old people with bad eyes can see.
