Hi there im Mark 25 from the yorkshire dales in england, new to smoking but i am a professional chef in a small hotel in a town called pateley bridge, we serve traditional britsh with a twist of french food and make just about every thing from scratch, im into making wine as well. i have several gallons of wine on the go at the moment.

im using a smoky mountain smoker i got from a american fiend who has just returned to the usa.

im mainly wanting info on smoking pork but smoking fish is somthing i can use in the restaurant i work at so any tips are greatly accepted and if any information is wanted by the rest of you to do with great britsh food then i will help how ever i can.
