Hey guys, I've been cooking on a gas grill for years. After trying to do jerk chicken legs on the gas grill with a foil packet of wood chips, I decided it was time to get a proper smoker or at least a decent charcoal grill. So after a couple weeks of checking craigslist, I just picked up a used Char Griller with the side firebox. It needs some cleanup and rust removal, a little paint, and a good seasoning, but after that, I'm hoping I'll have a good basic setup to learn with. I've already gotten some good advice on here about how to clean it up and I can tell that I'll get plenty more help once I'm ready to start cooking. I'm just outside Charlotte, NC, in Union County. Moved here from Oregon a few years ago.
