Good Afternoon Everyone,

A couple weeks ago i got tired of buying sausages from the store and decided it was time to buy a grinder and stuffer so i could get the taste/heat i desired. Also wanted to make my own duck/goose/venison summer sausage and snack sticks vs having others do it for me . During this process i discovered this site and it immediately reignited an urge to start smoking. I picked up a small Smoke Hollow 26142G-DS used once for $25 bucks on CL. After reading multiple threads on here i noticed that Todd Johnson's shop A-maze-n was only 10 minutes away, so off i went and picked up a tube smoker and pellets from Rhonda (Talk about a very friendly, very nice and very helpful company). Anyway i decided instead of just reading recipes like SoFlaQuers Finishing sauce (Using this weekend) i would join and introduce myself.

This past weekend i did my first test run to get a feel for the smoker and controlling its temp (Was hard due to it being windy so some scrap wood was used as a temporary box). I did some wings for me and a buddy due to being late in the day. They turned out amazing, the wings were a little dry from the cooking time but the drummies were amazing!. Skin was crispy and the smoke flavor stood out even after being tossed in my spicy garlic butter sauce. Looking forward to learning as much as possible and hopefully share some stories and pictures along the way.

That certainly looks like good food to me.

Little dry on the wings, I say not bad for a first try.

The other half was great, you say the skin was good.

I'd call it a success, do some reading, ask some questions

next time it will be WHOA THAT'S GREAT.

I appreciate the welcomes. Got out this weekend and smoked up a pork butt for friends and family this past weekend and they loved it. This site is filled with helpful tips and recipes that make this learning experience much easier and much more successful! There is a piece of the bark missing because we couldn't help but test it before it was placed in the cooler for resting.
