I'm new to smoking as my wife got me a great outdoors gas smoker last month. I am really eager to learn the right ways so everyone is blown away by my cooking. All my friends and family pretty much follow the 1-2-3 rule.

1. toss on meat
2. remove (usually when black)
3. drop in sauce pan

No seasonings, no smoking, nothing but a bucket of sauce. And I hate that, I know there is a better way so I have done my best to start learning!

I live in Wentzville, MO and my only hobbies outside of eating is homebrewing. I figured I take so much care in that, that not putting forth enough effort to cook right was a travesty.

I'm really excited to have stumbled across these forums!

Welcome from Sedalia, MO and Happy Smoke Rings. You are so close to Ft Leonard Woods; I heard so many stories that I went to Camp Pendletion and San Diego for my boot camp; (Maybe not the smartest thing I ever did?) Anyway, after a Fattie or two; you will get the real bug. I started out reading the smoker modification threads and then bought a smoker. I like sitting around drinking iced tea or diet pop and smelling the cooking otherwise I would have bought an electric smoker at Sam's Club. The fatties have convinced me that I made an easy to live with choice and Monday is my first Brisket try? Semper Fi.
