Hi all. I've been reading through a bunch of threads here and figured I'd go ahead and sign up. I recently got a grill dome ceramic cooker and just started on my journey of creating delicious smoked meats. I had a WSM knockoff that I tried to use but I was never able to get Temps low enough on that thing. It was either too hot or no heat at all. The grill dome has been great so far. I can make it hum right at 225-240 all day. Yesterday I smoked a turkey breast which was my first real attempt at smoking anything. Cooking wise it turned out great but I certainly over seasoned it (I was using Rudy's BBQ rub we got in a gift basket from our wedding). Besides too much salt it was good. I bought jeff's recipes and am interested in Bilbo's rub so I'll be experimenting next weekend on a Boston butt and some ribs.

Rudy's in great store bought stuff.  But you are correct that a little bit goes a long way! Those grill domes look like great units.  I'm sure you are happy with it!
