Hello,

My name is Dave. I have been using offset smokers for about 25 years now. I have learned a great deal and ruined lots of meat in the process. My favorites are pork ribs and brisket. I also love to smoke sausage. My go to wood for smoking is Pecan. I started getting the newsletter from Jeff a few years ago when I was looking for a good recipe for smoking country style ribs. I have learned several nice brines to use from Jeff and have tried many of his recipes. My tailgate parties are always a popular place to "get your Q on!"
