Name is Dan from central Colorado. Been smoking meat with average results in a Old Smokey electric smoker http://www.oldsmokey.com/products/test-electric-smoker.
I have the smoker wrapped in two beach towels I sewed together to keep the heat in during the winter. Yes I cook outdoors all year round.
So far I have smoked beer can chickens, biscuit, and pork ribs. My biggest problem is that the chicken skin gets rubbery because of the sealed nature of the smoker.
Found your site on Facebook. It was a post on how to build a smokehouse. http://www.goodshomedesign.com/how-to-build-a-smokehouse/
Looking forward to learning and hopefully contributing.
