Hello. I'm not exactly new to smoking. I used to live on the coast and had a home made fish smoker that I made out of a 55 gallon drum. Obviously, this is alot different than making ribs or chicken in a commercial smoker. I'm hoping to get involved in sausage making, and anything else that I can do in the smoker. The sausage making is something that I have been wanting to do for quite a while. I'm in the process of buying a meat grinder, and I hope I can get something going fairly soon. Up here in the mountains of Maine we have long winters, so I think this will be alot of fun. Anyway, any info that anyone can give me would be greatly appreciated.  Thanks,  Mark Tolman

There are some outstanding sausage makers here with lots of info to share. 

I did see your post on the smoker you picked up but unfortunately have no assistance for you in identifying the brand.  Hope you find some help with that.

Look around the sausage forum and you will find all the info you need.  Good luck and look forward to you sharing your experiences with us

First off Welcome Mark to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.
