I now live in Florida after spending 48 years in Maryland.  I have just purchased a Traeger Pellet Grill and am still in the learning process.  The first this I did was boneless pork chops and they were very good.  The next thing to try was a rack of ribs using the 3-2-1 method.  They came out great, but my wife likes the meat to fall off the bones, so back to the smoker to try again.  I am looking forward to many years of good eating off of this pellet grill.

Back to the smoker to try again, nothing wrong with that.

Just keep trying  (hey it's all good)  you'll get things dialed in.

Do a little reading on here, ask some questions.

The big thing to remember is to have FUN.

Welcome to the site!  Fall off the bone is easy to achieve.  Whatever method your using, just keep smoking until they fall apart when trying to lift the rack off the smoker.  If the temps have been below 275, they will still be moist!
