Just wanted to pass a hello on to everyone on the forum! Very glad I found this site. Hope to learn alot of info, which from just the little i've been reading I already have! I must say I love ribs and I'm always trying to find the best way to cook them. When I first started out cooking ribs, not having a clue, I'd boil them then bake them! Ouch. Then I ran across the indoor sauna recipe from the amazing ribs website and thought they were alot better! Recently I stubbled upon the world of smoking and that was the ticket! So far I've purchased a ECB and made the required mods and was very pleased. So for it has smoked a couple racks of ribs, some beer can chicken, and a butt. Very happy with the results! In the works of building a uds. I can maintain some constant temps with the ecb but seems like I go through alot of coal. I like what I'm reading about the efficiency of the uds. I have some q-view and ill make sure i snap some pics of my uds build!

Here are some pics from my first smoke! Didn't have a clue about fatties till I found this forum. I had to try one! Bacon didn't get too crispy like some of the others I've seen? Smoked at around 225-230.


Fattie with some canadian bacon, onion, green pepper, and pepper jack cheese!

I was so excited and hungry after the smoke I forgot to take more pics after the smoke on the ribs and the butt!

Looks like you've jumped in easily! Welcome to SMF and thanks for the qview. Fatty looked real good too! Aren't they fun! I hadn't heard of them before this site and now I am getting requests from friends.

First off welcome Skud to SMF. It sounds like you are well on your way to be an outstanding new member of this fine site. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Thanks everyone for the warm welcome! Yea, really happy how the fattie turned out. Didn't know if I could pull off the bacon weave, but it's actually pretty easy. I think it really makes the fattie!
