Hello,

New to the site. Have been a newsletter subscriber for a while. I've been hot smoking for a couple of years now but am just now getting into cold smoking and curing as well as sausage making. I live in Northeast Ohio about an hour from Cleveland. Have already found a ton of great info and am looking forward to connecting with folks. I posted a question about a fresh ham I am doing for Christmas Eve and was very pleased to have already gotten some very helpful responses. from some very welcoming folks.

I am also new and have been reading this forum for several months. I left Massillon, Ohio four years ago to start a second career in Oklahoma City. If you want to sample some great sausage and beef jerky to get ideas for flavors and seasoning go to the Westside market in Cleveland and walk around and sample.I miss that place very much and the people are very friendly and will tell you what most of the ingredients are if you ask nicely and maybe buy a few pounds!!  Your weather is perfect for curing and sausage making compared to the hotter Oklahoma climate!!   Good Luck!!  mds51

First off welcome to SMF there Chuck. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. Then if you have any questions you just post them here or yu can try in chat for a faster answer. If you are really new to all of this I would recommend that you look up and take the e-course. It is free and it will also give you the basics on smoking. So with all that said now go and get something to smoke.

mds51 - I know my way around Massillon a little bit. My daughter played Junior Olympics Volleyball for a team down there a couple years ago.

I love the West Side Market! I have a buddy who lives in Ohio City, just a 5 minute walk from the Market. I turned him on to smoking meats about 5 years back and now he's trying to become the charcuterie and sausage king of Hipsterville up there. We've purchased two whole pigs (one we did on a big rotisserie, the other we did in a Caja China) from the Whitaker Meats stand and get almost all of our fish (what I don't catch myself) and poultry at the WSM. We get together at his place a couple times a month to make sausages and try new recipes. We always start at the Market. In fact we were there just last Saturday getting a few butts for sausage and decided to load up for a cold smoke feed on Sunday. We were there close to closing and got some ridiculous deals on meat & fish the vendors didn't want to have to pack up. Nice folks and very helpful.

You are right about the weather in Ohio being good this time of year for smoking and curing. But then again I'm one of those rare birds who actually enjoys the snow and the cold.

You couldn't have picked a much better place than Oklahoma City for quality meat and plenty of bbq/smoked meat enthusiasts. Enjoy.

I got my fresh ham last night and started the brine. Pictures to follow.
