Started last night with a 14.5lb choice brisket.



Here it is about to be foiled. I separated the point and flat when i foiled.



Here is the point coming out of foil about to be cubed for burnt ends



Flat going down for a rest.



Burnt ends beginning.



Now on to the ribs. Got a pack of spares last night. Trimmed the first up just fine. Went to the second one and it had black spots in the meat??? and smelled funny. Chucked that one. Not taking chances with fam and friends. Ran to the market and got some BB's.

Here is the smoker before foiling. You can see the beans on the bottom. About to throw the ABT's in.

Looks great!  Wonder what those black spots were?  Did you dicuss with the folks you bought them from?

The store we got them from is a hour away so I haven't talked to them yet. Next time we go there I will.
 
Looking good! The last spare ribs  I bought from Publix,  I put in the fridge for 2 days (well  before the sell by date). When I went to use them they had green/gray blotches on them and they smelled funny! Took them back to the store and got another rack.

Appears those spots are from the drippings of the ribs above them from looking at the last picture.  That brisket looks amazing!!

The spots were on the raw meat. It was when I was trimming it that I noticed it. Then smelled the meat and it had a bad smell so I threw that rack in the trash.
 
Ok sorry for the delay. Had to entertain company now I can finish the thread.

Here are the ribs coming out of foil



Here they are finishing on the grill.



Grilled some Beer and Onion sausage for a app



I was lucky to get a picture of the sausage before they were gone.



Only had a chance to get 1 picture before everyone was all over the food. It the back right you will see the rolls my wife made. Front right is the brisket flat. Behind that are the burnt ends. To the left of the brisket were ABT's. Then Beans and Ribs. In the back left we finished it with a Caesar Salad.



I was pretty impressed with how much food the people put down. We had 11 adults and 7 kids here and they ate all but 1lb of a 14.5lb brisket. All the ribs, sausage, burnt ends, and ABT's. Then they polished off half the tray of beans. And still had room for brownies and ice cream.

Thanks for looking everyone it was a fun day.

Good food is EASY to eat (a lot of)  and all this looks GOOD.... REAL Good

Putting that all together took great planning and execution.  Nice job.  Invite me over next time you do this and I'll say more nice things about you.

Thanks guys. It was fun. I love doing the big smokes. Ill be doing a bit over the next month. Birthday party and wedding rehearsal dinner to do so I had to practice a bit :biggrin:
