So I smoked a boneless fully cooked ham yesterday, pulled it and forgot the damn thing on the counter for 5 hours! Is it shot or do the nitrates and high salt content preserve it?
 
I'd think it's fine, but shoot Chef Jimmy a pm and get his take on it. He's the food safety mod and has a pretty extensive background in culinary education.
