standing over the pit- kentucky
3 28oz. cans petite diced tomatoes(or about 12 large tomatoes)
1 yellow onion(i smoke it first)
6-8 cloves smoked garlic(cloves-not bulbs)
6-8 smoked jalepenos(i like a few to be red)
1 tbsp. crushed cilantro
1/4 cup white or apple cider vinegar(i do the apple cider)
1/8-1/4 cup sugar (optional)

throw it all in a pot & simmer for 4-6 hrs then refrigerate.
the sugar & apple cider vin make it sweet,but after a few chips the heat creeps up on ya & stays w/ ya.

good eating.
 
Thanks Gypsy, my neighbor is known for her salsa. I will pass this to her and hopefully get a payback in, "Good Eats", da da da da etc,

hmm sounds tasty, I wish I could find red japs around here. I didn't think people used white vinegar for anything besides cleaning. it brings absolutly no flavor to the party.
