Welcome! You should consider moving to lump charcoal, if yer not using that. The 5 day Ecourse is excellent for beginners as well.

And lots of mods for that machine... charcoal basket first, tuning plates next...

Hello Jim, glad to have you with us at the SMF. Read around the forums, plenty of advise on mods and recipes too!

charcoal basket? do you have the same unit? hoping the existing grate will work to start and a custom grate and pan for easy ash removal.

going for the first smoke tomorrow. young small turkey breast, mesquite, lump charcoal.

drilled 2 better temp guages. one by firebox and one on stack end. trying just a foil basting pan to extend the heat to center and a little heavy duty foil on the lower charcoal great as makeshift tuners. looking for a tin can to extend the stack down a scoshe.

You're heading in the right direction....keep reading the previous threads about mods for your smoker.....lots of info to be found/shared here......oh, and WELCOME to the SMF!

L8r,
Eric

like that idea tex. angle iron support on the bottom and a tray underneath perhaps.

Thanks for all the help. i'll have a few bumps i'm sure but with the amount of knowledge i've got in the short period i've had here i'll be the talk of all my daughter's friends and families.
Gracias!

I'll keep ya informed of the newb's progress. the 7 year old daughter will be assisting.

Welcome to SMF, Jim from one FL member, to another! I'm on the east coast of the state near New Smyrna Beach. Lots of FL folks here that may drop by to say "hello" to ya!

Glad you've realized this will be an "obesssion". It's become one for me and I'm loving every minute of it!!
