Grilling/Smoking Chicken Wings Direct on Kamado Joe (no heat deflector...yet)

I am still waiting on my Divide and Conquer system (for my new Kamado Joe) which has the heat deflectors and raised grilling surface but really want to smoke some wings today. Without being able to smoke with indirect heat or raise my grill grates, how would I go about making some good chicken wings?  Would love that smoky taste.  I was thinking putting them in a aluminum pan @ 275-300 until reach 190 degrees and flip and sauce about every 15 min or so... Any ideas would be appreciated!!!
 
 i have Kamado and put coals on one side and the little chicks opposite for  indirect cooking  with a chunk of wood plus chips right at the getgo plus most Ks pull air/ smoke from the front to the back  coals front chicks in the back
