Good afternoon all,

My name is Nick and I am new to smoking. I live in Tallahassee via South Florida (Dania Beach) and went to FSU. Now I work at FSU but will (hopefully) become gainfully employed as a law enforcement officer. I just graduated the local law enforcement academy a week ago today.

I have joined this forum because it seems to be the place for smokers, grillers, fryers and the like to convene and talk about what they love on the internet. Although I am completely new to smoking, I am very eager to learn everything I can. I have already learned a lot, but I still feel like I know nothing at all.

My girlfriend got me a Brinkman Mini Offset Smoker (http://www.homedepot.com/p/Brinkmann-Charcoal-Grill-and-Off-Set-Smoker-810-3015-S/204442310)  for my birthday about a month ago, but as I was in the night class at the academy and still had a day job, I am only now starting to use it in earnest. So far, I have smoked several chickens and a six pound pork butt and I have grilled a few portabello mushroom burgers on it.

I love the smoker, but I may have to make a few mods to it as it has little cracks and crevices everywhere that release heat and smoke. Otherwise, it seems to be a great introductory piece of equipment. Unfortunately, I got a little carried away cleaining the inside and scraped off some of the inside finish. Does anyone know what I can do to refinish the smoker there on the inside or somehow strengthen the finish or apply my own coating so that it is a bit hardier?

I probably shouldn't be discussing all this in the 'Roll Call' forum but I have a tendency to write long-windedly.

Folks here are happy to help with the smoking questions so just ask when they pop up. There's no right way to smoke, just what works best for you and your epuipment.

BTW, congrats on having one great GF. My wife figured out long ago that when she bought me BBQ gear for the backyard she didn't have to cook! She's been doing that for 34 years!

Glad you joined the group. The search bar at the top of any page is your best friend.
About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
and the list goes on has probably been posted. Remember to post a QVIEW of your smokes.
We are all smoke junkies here and we have to get our fix. If you have questions
Post it and you will probably get 10 replies with 11 different answers. That is
because their are so many different ways to make great Q...

Welcome, from southern Ohio, to the best forum on the internet if you are looking to learn how to BBQ/smoke/brine/cure/inject. Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. Use the search bar at the top of the page and you will be led to the answer to most every question you can think of. If you don't find the answer there then just post it and someone will chime in with their opinion on the subject.

What part of the your smoker did you loose some of the inside finish from? If it is the cook chamber then IMHO I would'nt wory to much, just coat it with vegatable oil or spray it down with some pam to prevent rust. If it is the fire box then you could clean it off real well and repaint it with the highest rated high temp paint you can find.
