Greetings from the deep south!

    Hello Everybody,
    My name is Nick and I'm coming to you from Bush, LA....about 50 miles north of New Orleans. Beautiful country down here. I have 6 acres out here and love to cook, especially outdoors. I owned a lil restuarant years ago but didn't know what I was getting into. Just knowing how to cook doesn't cut it. That's the easy part. It was the hardest job I have ever had in my life. I took a hobby and turned it into a job. Not a good thing. Anyway, these days, I cook just for the fun of it for family and friends. Everybody raves and my Jambalaya, Italian Olive Salad/Muffaletta's, Boiled and Fried Seafood, and Outdoor Grilling....but what I REALLY wanna learn how to do is BBQ...the right way! My ribs are tasty by doing them slow in the oven and then finishing them on a grill but I want to learn how to smoke them...the way it suppossed to be. I'm currently building a "BigBaby" smoker. Ive researched a lot of sites and I think I got a handle on constructing it. When it's finished, I'll definitely post some pics. In the meantime, I'd really appreciate any input, tips, tricks, etc. on both the BigBaby and smoking in general. I'd like to do ribs, pork butt, and brisket with the smoker. I have a decent rub recipe but I am going to purchase Jeff's rub and sauce recipe's and give them a try. I'm sure they're great.

    Welcome to the forum Nick. Try taking Jeff's 5 day Ecourse its good info and its free. Theres also a lot of great info found by clicking on the subjects on the left hand side. Lots of friendly helpful people willing to help to. Post up some pics of your smoker so far or the plans and I'm sure people will give you some ideas. Remember we like Qview and Happy Smoking.

    Heya Nick, Welcome to SMF! And yeah...I have heard many times about the resto biz. There ARE a few success stories here, but percentage wise, it's a fool's errand. I'm gonna try a catering type thing one day, just to help ruin MY hobby LOL! Anyway... the folks here will have you cranking out low and slow smoked ribs and other delicacies in a surprisingly short time!

    Welcome to the SMF Nick! Glad to have you. Sounds like you're a cook already but to get into smoking, I'd second Pinywoods' suggestion to go through Jeff's 5 day e course. It'll get you off with some really good fundamentals. Again, welcome and hope you post often.

    Welcome Nick! I've been smoking for about a year now, and I can honestly say that I have not fired my grill up for anything since. You'll never do ribs in the oven again!

    Nick, The SMF will get you up and running quickly. Sounds like you have a great place down there.

    I wonder if 'smoking' jambalaya would help it? (not that it needs help but I thought of some side dishes here like Dutch's bean dish)

    Welcome Nick, glad to have ya aboard. It won't be long before your an ole pro at smoking ribs. This is the best place to learn. I sure hope it make you want to get back into the rest business. I know you will never order ribs at a eating place again. Its to much fun doing them yourself and you can't order any as good.
    Being from La. I know you have a few beers when smoking, thats the second best part. If smoking was faster they would have to make less beer. Haven't see any Jax in a while. See how smoking boost the economy.

    Welcome aboard and glad to have ya! Sounds like ya live in a nice little holler there. Ifins ya enjoy cookin, smokin is only gonna make ya happier! It is not a scary as some folks like to think it is. Few basic rules and idears and yall be crankin out fine vittles in no time!
