Y'all are sure a friendly bunch!

I've spent a coupla hours here already tryin' to edjumacate myself.  Lot's to learn, but it's tough when you don't know the acronyms yet.  I wanted to start a thread about that but wasn't sure where to put it.

So, here goes:  What is AMNS?     AMNPS?     UDS?     AMS?

I am a big fan of N.M. food , but it's been so long scince I've been there,I forget some of the processes.

Oh,by 'Green Chile',I don't mean the Roasted Chile,There's a a dish with the Chiles and Meat that I ran across in Mountainaire,N,M.  An old Cafe in town turned me on to it and now it's closed.

I use it everyday, sometimes 3 or 4 times. Still learning alot, still alot to learn.

Hi Robert!  Glad a fellow New Mexican joined the happy group.  I live about 60 miles from you in Vadito( about five miles from the Sipapu Ski Area).  You will find all the info and techniques you need here.  We need to get together some day and compare smokes.
