I have been lurking around the forums for about a week. There is so much knowledge on this forum and I can't stop reading. I have always been a huge outdoor cooker and can hold my own but some of the threads and pics amaze me. Never thought I would be modding my MES but its gonna happen.

I have 2 wood smokers, 1 is a very large and the other is just big enough for a few racks of ribs or a nice brisket. I also own a MES 40 with glass door. I love doing ribs, briskets, pulled pork, turkey's and pork loins. The recipes on the site will keep me busy for a while.

I am just SW of Houston in the Richmond/Rosenberg area. I will post some pics to my profile eventually ;)

Welcome aboard Shakyleg!  This is the best place I know for sharing ideas on smoking, grilling, curing, etc.  There are plenty of friendly, knowledgeable folks who really enjoy helping one another.  Looking forward to your input here, and just ask when you need anything...someone here will surely have the answer.
