2 dogs, I used to worry too much about times and temps on ribs. I am still a beginner for sure, but a few successful smokes will fill your mind with ease and make things more enjoyable, and less.................technical. As it has been said here many times, you just have to learn a "feel" for the times. I do believe that every smoker is different. The times will get it done for ya, but knowing what to look for and how they feel and cook, is an art. I have experienced it once or twice, but the more I cook , seems like the easier it gets. The smoker I have makes it so easy to Q, and makes me look so good. I do alot of work, thats for sure, but I sweat the small stuff alot less than I did 2-3 months ago.
Thats whats great about this site,a little time and homework, learn your rig, and everyone is a potential pit master.
