I threw my back out Friday night and was told my the Doc to stay down flat all weekend. All week I had been looking forward to smoking this bad boys (13.9 lbs & 12.75 lbs) and to do a left side vs. right side compairison. So being in alot of pain and on loopy meds, I knew I wasn't going to be able to handle the smoker.
At 6:30 Sunday morning when I got up to take some pain meds, I trimmed the briskets up a bit, rubbed them down with some Worcestershire sauce, cracked black pepper and smoked kosher salt. Placed them into their own hotel pan and into the o**n set at 230*. At noon they where at 160* so I had my son drain off all the fat, poured in a can low sodium beef broth over each brisk and coverd the pans with foil. At 4:30 they were at 190* so I just turned the oven off. When the family showed up, I talked the boy through on seperating the points and flats and slicing the meat. Brisket was served up with some garlic smashed 'taters with gravy made from the pan juices. salad and hot rolls.
Sorry no pictures-as lousy as I was feeling, I couldn't even get my arms up shoulder high to handle the camera and I couldn't talk anyone else into taking pictures-the ungrateful rodents!! (And I mean that in the most loving way, too!!)
