Gotta forgive me-but I had to use the O**N

I threw my back out Friday night and was told my the Doc to stay down flat all weekend. All week I had been looking forward to smoking this bad boys (13.9 lbs & 12.75 lbs) and to do a left side vs. right side compairison. So being in alot of pain and on loopy meds, I knew I wasn't going to be able to handle the smoker.

At 6:30 Sunday morning when I got up to take some pain meds, I trimmed the briskets up a bit, rubbed them down with some Worcestershire sauce, cracked black pepper and smoked kosher salt. Placed them into their own hotel pan and into the o**n set at 230*. At noon they where at 160* so I had my son drain off all the fat, poured in a can low sodium beef broth over each brisk and coverd the pans with foil. At 4:30 they were at 190* so I just turned the oven off. When the family showed up, I talked the boy through on seperating the points and flats and slicing the meat. Brisket was served up with some garlic smashed 'taters with gravy made from the pan juices. salad and hot rolls.

Sorry no pictures-as lousy as I was feeling, I couldn't even get my arms up shoulder high to handle the camera and I couldn't talk anyone else into taking pictures-the ungrateful rodents!! (And I mean that in the most loving way, too!!)
 
Dutchman... you did what you had to do to ensure the family got quality food. How can you be faulted? Fatback MIGHT be able to catch you in this condition, however... best turn on the security system! ;{)
 
Sooo no left - right comparison. No smoke. No pics. Not even any mention of how it tasted. I think it was just a ploy to use the O word and get by with it

dutch, i hope you are felling a little better today. the brisky was served!!! were there any conclusions about the lefty vs righty even if o**n prepped?
 
Well, I did have the briskets on seperate cutting boards-even though both briskies were cooked to 190* internal, it seemed like the left side brisket was nearly breaking apart while being sliced. The right side slices held together.

Actually, the smoked kosher salt really added to the flavor of the meat. I'm glad that I thought to hang a couple of cheese cloths bags of kosher salt in the smoker when I smoked some ribs last month. No smokering but a nice light smokey flavor.

My doc has me going to a bone crusher (Chiropractor) tonight, so I know I'll be feeling much better tomorrow.
 
Sorry to hear about your back, I know how painful that can be, hope you're feeling better soon.

I'm guessing that the "hot box in the kitchen" worked out okay for you?
 
Thanks solar- Yep the "hotbox in the kitchen" worked just fine.

About three month ago, we pulled the old electric range out and put a natural gas range in. Gotta keep Mamma happy. Lets see-New tile in the kitchen; new wood laminate flooring in the kitchen; new gas range in the kitchen-Yep, I figure I'm good on the "honey-do" list til next month!! She's been hinting about converting the spare bedroom over to her "sewing/craft/quilting" room. . . Let's see-what new power tool do I really need to do the job right???

Good call on the smoked salt too. I bet your food is always good - even from the o**n.
 
I use this idea, but some times it can go both ways: you get the tool you want, but then you have to spend 2 weeks of your free time working. Or the tool is to expensive, the project never gets started, but you hear about it for the next 2 years of your free time.

Dutch, I think we can forgive this breach of protocol under the circumstances. You still perservered to get the grub on the table. Get well quick and back to the pit soon.
 
Yeah, but I gots a good excuse. . . That's my story and I'm sticking to it!!! Nener, nener, nener!!!

BTW bubba, nice sign. Maybe we ought to get TulsaJeff to update the Imoticons and include that one in the mix.
 
I'm trying to wrangle a lathe out of it, but Ma just can't seem to see how having turned legs on her craft and sewing tables will improve the functionallity of said tables when a plain ol' leg will do. Hey-but I'm still trying!!

Well, there is nothing to forgive about the O word usage, because I don't believe any of this and you don't really have any proof since there were no pics.

I suspect you are loopy from the meds and what you imagined to be an oven was actually the door to your smoker.......if, indeed, anything did get cooked at all.

Now........be a good moderator and make all of this go away and no one has to get hurt.

Hope your backs feeling better. At least you got the dinner done and thats the bottom line. HMM maybe you need to turn the fancy curtain rods for that sewing room so they match the table legs

ahhhh welll, some of the best food I've ever eaten never had pics taken of it first....Seems like the crowds lettin ya slide so bein the new guy I reckon I'll foller along...
Back aches really suck. Try puttin the loopy pills in the BBQ, then it's medicinal...

You didn't use any LS just for flavor? You could have said "lathered with LS and put in the o**n

Get well Soon Or......we will be after your tenderloins--sorry, couldn't help myself there. I call my cat pork loin because he's just that size.

Seriously, you might have been able to get the boy to put em in the smoker for a few hours then to the oven---we got to get the boy trained!! Maybe you could start an apprentice school thread and get him going on this forum. We could all send donations to pay for the meat and stuff!!
