hello

today i put 13 pounds of bacon in the cure i did 2 five pound pork butts for buckboard bacon and i did one 3 pound pork loin for canadian bacon i used the hi mtn season cure for the pork butt and i did the loin with tenderquick i will post pics of the finished product in a few days

Sounds good, I was planning on smoking a couple of pork butts next weekend for pulled pork but now you have me thinking about trying buckboard bacon with one of them. I have never made buckboard bacon before, is that brined and injected?

i use hi mtn seasoning cure for buckboard bacon it is good stuff it is a dry rub deb has a recipe for the stuff it is a wet brine i have never used it
 
Ive been making buckboard bacon from Hi Mountain for awhile now. There stuff is AWESOME!!
