My butcher has picnics on sale for .99/lb. Would you stock up???Never done a picnic, but I've read they do just about as well the butt. Plus it gives me a reason to make some cracklins since every picnic I've seen's got the skin still on.
 
That's a good price, I'd put a couple in the freezer on that one! Picnics are kissin' cousin to the butt; it's the lower half of the shoulder (the butt is cut off the square end of the picnic). It is leaner and more sinewy as it's the fore muscle that is used for support and walking, a little stronger flavor, and more bone. But, the lower price justifies the higher waste (my dog PJ always thiinks it's a great purchase!

). They usually have more fat cover under the higher end of the skin (where it is square). If you get several, trim out that fat when you garner the skin for cracklins' and cut it into chunks and render it in the oven in a loaf pan... best lard you'll ever use for pie crusts! Great for sausage or pulling, I've boned them out and tied them up for regular pork roasts too, makes a great Sunday dinner!
