I got my hands on some alligator fillets, so I decided that I will smoke it tomorrow evening. Did some research and the consensus recommend marinading it in Italian dressing overnight. I will take pictures.

Also, I'm going to make my first-ever smoked dessert! Will  keep you updated!!!
 
That gator has been marinating in the swamp all his life. Overnight in italian dressing won't make much difference. If I wanted anyone to smoke alligator for me, it would be you, Steve.

Are they from the tail?

If cooked wrong they can be really tough.

Either low & slow, or hot & fast. In between doesn't work.

I was gonna try Smoking a Pennsylvania Gator, but they're just too nasty to handle, especially in the Winter, Through the Ice!!!

Nope---Ran into a problem-----Maximum hole size through the Ice in PA is 10". Too Small to get a PA Gator through.

Have to go back to PA Trout.
