Am I way out of line here? My daughters birthday party is to morrow at one. Anything I should be sure to do for three bone in, skinless 6 pound shoulders? Cooking time might be longer due to heat absorption right? Party is at 1:00 I think I'll put em in at ten and stay up with it til two (keep up with wood chips and spritz with apple cider vinegar/apple juice) then let it cook through the night til 10 or 11am.
