Since I signed up at the beginning of the year I thought it was a good idea to introduce myself to the group. All previous post were lost but no big deal.

54 yrs old, married with 2 kids in college

Not new to cooking. It is one of my passions that I do for fun. I enjoy cooking ethnic foods as well as American classics. No limits on what I'll try. Don't cook by recipes but a good sense of what's common in a particular cuisine is enough to make it work with a little imagination. A well stocked pantry is essential. With that you can make most anything off the cuff.

Just bought a smoker so this site has been a good learning experience for how to do it right. I've learned a lot in the couple of months that I've been visiting.

Other hobbies and enjoyments include playing music, Japanese kitchen knives and sharpening, cigars, fine spirits and home coffee roasting, scuba diving and spearfishing but it has been a few years since I last spearfished. My brother had several shark encounters in a short period of time which led me to say maybe I don't want to do this that often. As you can see most of these activities including cigars are a spin off on my culinary adventures. Cigars like wine are about flavors.
