Here is a recipe for Alsatian Christmas Sausage. I got the recipe off the web a few years ago and I have been making it every year for my Family.
I make it into small patties and fry it up Christmas Morning to have with our Christmas Breakfast. Enjoy.

[font=Verdana, Arial, Helvetica, sans-serif]Ground pork: 1 lb.[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Coarse salt: 1/2 tablespoon ( cut in half if your are not going to stuff in casings)[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Ground ginger: 1/16 teaspoon[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Sugar: 1/4 teaspoon[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Ground cinnamon: 1/8 teaspoon[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Ground cloves: 1/8 teaspoon[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Ground black pepper: 1/4 teaspoon[/font]
[font=Verdana, Arial, Helvetica, sans-serif]Ground nutmeg: 1/16 teaspoon[/font]
Use natural sheep casings to stuff and make links, or leave in bulk and make patties.
 
It's type of casing the recipes called for if your going to stuff in casings.
