I am looking forward to seeing all the great pics memorial day weekend generates here. Some of mine- if you haven't used a dutch oven on your smoker to cook stuff yet, you need to try it! Here is a batch of chile. I brown the meat - in this case chopped up flank steak- under heavy mesquite, Then I make add the ingredients for a nice cocoa cinnamon chili and give it about 1 hr of pecan smoke. It is the most amazing chili! Indoor stuff just cant compare.


Now the pork butts are on the egg. A lot of folks complain that since the eggs use such little fuel- maybe 5 lbs of coals for a 12 hour smoke- that they cant get enough smokey flavor. Not only do I mix splits throughout the coals, I actually put 4 of those cheap metal boxes that you fill with wood chips around the top of the coals. I get 4 hours of smoke so heavy it looks lke my house is on fire)
