1/2 med white onion diced

1 lg cucumber peeled and sliced

1 green bell pepper seeded and chopped

2 garlic cloves peeled

Gazpacho sounds like an excellent side dish for smoked meats!  Cool, refreshing, and savory, I can taste it already!  For spicy meats I'd make sure the gazpacho had plenty of cucumber.

exactly, it is a good balance to the smoke. It also makes what I think is a good dip for nachco chips
