My tomato  plants are producing a lot of fruit and wit only 2 eating here I am always looking for ways to use them.  Found this recipe and figured I would give it a try after I tweated a little.   It is a keeper

4 or 5 ripe tomatoes. blanched peeled and chopped

    1/2 med white onion diced

1 lg cucumber peeled and sliced

1 green bell pepper seeded and chopped

    2 garlic cloves peeled

    1/4 teaspoon salt

    1/4 cup olive oil

    3 tablespoons balsamic vinegar

    1/8 teaspoon ground cumin

Mix it all together in a food processor or blender. Then chill in fridge

  2. Gazpacho sounds like an excellent side dish for smoked meats!  Cool, refreshing, and savory, I can taste it already!  For spicy meats I'd make sure the gazpacho had plenty of cucumber.

exactly, it is a good balance to the smoke. It also makes what I think is a good dip for nachco chips
