Got this (and another) at a local market. Watched him trim the "Prime" off it. Got it for .99cts/lb. Good deal in my books!

The mrs wanted yardbird so I brined two breasts overnight, injected (Zesty Itailian-strained to get the bits out so it can go through the needle), rub under the skin, and rubbed with EVOO.

dont u hate how u have to strain the italian dressing. im still mad about that. ive started looking for a massive injector so i dont have to deal with it. haha
 
Hey richtee. If you aren't used to seeing beef ribs around then you should find a butcher who ties their own ribeye steaks. These Prime rib bones are harder to find because if they are removed in the packing house they are usually frozen or vac pak. Wherever bone has been cut, meat will change color quicker from the bone dust so these ribs won't last long enough to get from packer to buyer. Visit a good butcher, Keep our trade alive.
