Hi guys, I love your community and hope to become a part of it. I'm from Russia and I just fell in love with smoking and barbecuing. First of all sorry for English - I haven't been practicing it for years since my short stay in Pensacola, Fl (spent 4 months there preparing for the TOEFL). I have been in a restaurant business for 10 years and I am now opening a new craft beer bar with house made sausages with a little twist. Just sausages - no other BBQ stuff (that will be hopefully my next project - obviously I need to learn a lot before that). Of course, I want to make hot smoked sausages too, that's why I'm here. I have no any experience in smoking at all. In my country it's not really common - only commercially made not really good smoked sausages and chicken. I need help in choosing a small smoker for the bar (which has about 80 seats), cause for the beginning I want to smoke just one sausage out of 6. Read a lot of books and web-sites, but still feel a little bit disoriented. I would appreciate if you help me to choose the right branch of the forum to start my topic in.
