That Italian sausage looks great. I need to try and make some of that.

Coming from a 1/2 Italian 1/2 Pollack, those look great!  Your recipe looks great as well.  Love that your daughter is helping.  My son and daughter love to help me as well since they love to eat it !

Just a few things to pass on to you if you are interested.  I'm very detailed and noticed the pounds and price of that pork, 7lbs for $20 which my math tells me $3 a pound which is WAY to much.  I too am from Concord NC and have found a few places that you might be interested in to get your pork at a better price.  There is a place not far from you called CRUSE MEATS in Rimer NC just off of Hwy 49 in the town of Rimer off of Gold Hill Road on Rimer Road I believe. They sell pork butts also and just pork and pork fat if your interested.  They ONLY accept CASH as well so remember that when you go.  It's a long way to find a bank from there!   I noticed the "McDonald's T-Shirt" your daughter was wearing and thought, No that can't be and then looked where you were from!!!  I go there a lot as well up near the Cabarrus Arena.  Cruse is not that far from there!   There is another place in Concord on Hwy 29 called the Stock Market.  I bought a package of 2 Boston butts totaling 16 pounds for $28 which is about $1.69 a pound.  I know everyone will say "don't buy the ones with the bone in them you get more meat."  I get that, however at that price I'm still getting close to 15.6 lbs because I debone every piece of meat possible.  I also bought some pork from the Stock Market with a small bone for my venison summer sausage and it was 6.3 lbs and I weighed it after I took the bone out, 6lbs... Can't really complain on that.

Man I have no idea how I have missed this post for so long - Scott those look fantastic and your helper is very cute.  Love seeing kids in the kitchen as most of you know.
 
Great looking sausage!!!!  I lack the four hands it takes to get those stuffed and get the help of my 16 year old daughter sometimes.  She always laughs about that being how we spend out quality time together.  I told her one day when I am long gone she will remember making sausage with Dad and it will bring a tear to her eye.  I guarantee.

I shop at Cruse and the Stock Market all the time. The owner of the Stock Market is a friend of mine. Best Butt I ever got was from The Stock Market. It's worth the few extra pennies. I buy my American Made RO Lump there too. I live right around the corner from the Cabarrus Arena. If you look close you will see that I paid 1.29 a pound for the butt.

I made my first sausage this past weekend and my daughter was right there the whole time.....even stuffed while I ran the grinder!
 
I some how missed this as well...Great recipe I like your proportions of seasoning...I have three helpers two will be graduating Culinary School in Oct...They say I am to bossy and give to many details they already know...But I would never cook by myself if I could have them with me...JJ
