Deeretrax from CA here but please don't hold that against me. My cousin in TX turned me on to your site.
I've smoked off and on in my Weber Kettle for years but decided to leap in and I bought an Oklahoma Joe's Highland model. I also purchased as many mods available for this model as I could find. Before I assembled it I gave it several coats of Krylon high heat black first.
After the first couple of burn ins I've done a few smokes of salmon already and have been very happy with my results. Not only with the salmon itself but happy with the tuning plate mod etc. I scrapped the original temp gauge after boiling some water and compared it with my I-grill digital. There was a 35 degree difference. Ordered 2-3" Tel-Tru right after that. I like to smoke during the winter too and have some ideas to make it easier but I haven't invested any $ on that end yet.
Looking forward to learning some pro secrets here. So I shall imbibe.
