Hey guys I am smoking my first turkey this Saturday. I think I am going to use Jeff Phillips buttermilk smoked turkey recipe.

I was thinking of using some pecan chips. Also I have apple and hickory. I was curious as to what I should use. I was thinking of using apple and pecan (more pecan than apple).

Or just using pecan by itself. Whats your thoughts?
 
Hickory might be a bit heavy unless you are used to using it. Apple and pecan are both lighter smokes. I like pecan but thats just personal perfrence.

IF its your first, I suggest to try to go light on the smoke no matter which wood you use. Seriously, more meat is ruined from too much smoke than not enough. Bet ya never heard anyone say, I can't eat this, it doesn't have enough smoke.

Love the Pecan smokes.  Picky Husband likes that better than hickory.

Apple is a nice mild one to use too.  Pecan to me adds a touch more smokiness.
