First Tri-Tip

  1. I was at the store a month or so ago and they had a tri-tip in the bargain bin. Trip-tips are not common in Husker land, in fact it was the first I have ever seen, so I grabbed it and threw it in the freezer. I got it out this weekend to take my first crack at it. I rubbed it down with the last of a steak rub I had from a trip to KC this summer. I threw it on the smoker with some hickory and persimmon wood. I had the smoker running at about 230ish. It was only about 1.8lbs and it took about an hour and fifteen minutes. Then I double wrapped it in foil and let it rest for about 30 minutes while got some potatoes on the grill. When I unwrapped it it was soft, tender and delicious. What a great cut of meat! Mrs. Duff and I loved it. I will be keeping an eye open for another one.

Congrats and good luck finding more! They use to be a rare find around me until recently! $7.99 a pound was the best price around then grilling season hit and they went to $11.99 a pound luckily a restaurant supply store stated to carry them for $3.29 a pound!!

Nice job, I just seen them at Winco foods and should have picked up a couple but cart was full enough.

    Nice plate shot

A full smoker is a happy smoker

My favorite cut. There's also a ball tip that's smaller and awesome. Tri tip is very hard to mess up. I've overdone them and they still turn out great. I do a reverse sear now. Smoke it for about an hour then move it over the coals for about a minute on each side. You get a good smoke ring with very little brown and nearly complete pink insides. Savemart has them for $3.99lb on untrimmed cuts this week. I was teetering on buying 2 or 3 but 10 hour work days sap my after work energy.
