First time smoking chicken breasts

  1. Saturday I sprinkled some rub on a few (large!) skinless chicken breasts and wrapped them in bacon.  On the smoker they went.  Toward the end I spread some bbq sauce a couple times each side and they turned out great!  Next time I won't be too skimpy with the bacon.  There's something wonderful about bbq sauce and bacon together - took the chicken breast flavor to the next level!  

    Oh, and in my haste I grabbed colored toothpicks from the cabinet to hold the bacon in place.  When we cut into the chicken, the coloring from the toothpicks left a fun little art project in the meat.

    This was a fun, easy, tasty smoke!

    Looks good.

    Did you also brine them first or just use the bacon to keep them moist? I just did wings for the first time, but will be doing a load of breasts soon.

  5. No, I didn't brine them.  I just relied on the bacon.  I stretched the bacon out a bit to get more coverage over the breasts.  But next time, I'll just use more bacon.  We left the bacon on when we sliced it and it added to the taste.  It wasn't crispy, but it was fully cooked.
     
  6. if you wanted to crisp up that bacon just a bit tou could get your grill (or even a frying pan should work too) smoking hot about 30 sec to a min on each side should do the trick.

  7. I did the same thing on the weekend but I brined mine first for 4hrs...they were the best thing so far out of the smoking...nice and juicy!

    [​IMG]  A great first Chicken Breast cook . Nice looking and I agree , Bacon is a hit with anything.

  10. I took notes during the smoke but forgot to check them last night.  I think temp was fairly steady at 250 and time was 3.5 hours.

    Looks great! I'm planning on some tomorrow but I'm going to slice chix into strips and wrap with bacon. Another tip is to slightly precook the bacon to render some of the fat.
