I've done a bunch of butts and fatties and I figure it's time to try some ribs. Have a decent slab of baby backs and the wife picked up a bunch of rib tips that were on sale so I guess I'll give it a go. I'll try to post some pics as I go.

Check. Got the membrane off the slabs and even gave the others a once over and found a few pieces that had some membrane on them.

Here's a pic of them ready for the smoker.

Looks good. Are you going to use the 2-2-1 method?

yummy....I havent smoked ANYTHING for about 3 weeks

I know....Its a sin!

Yep, I'm trying the 3-2-1 method. So far so good I think anyway.

Here they are when I put them on.

And here is my smoker hopefully doing it's job. Does that look about right for the smoke?

Lookin good No Wake! I use the same times for bb's or spares. looks like ya be doin spares.I would suggest to smoke em at 225-245 for 2 hrs, spritz with your favorite mop, another 1/2 hr in the smoke, then foil(spritz again before ya close the foil, back in the smoker for 1 1/2 hrs in the foil, and then take a peak at them(take the packets right off the pit and check em) I f they look tender and the pullback is good, then carefully place them back on the pit and glaze with a mixture of your favorite sauce, cut about 1/3 with the juice from the foil

(don't tell anyone about that) and then continue the smoke for another 1/2 hr to 1 hr. maybe an addition to the glaze after the first glaze has set.

should work out good, especially if ya got a good batch of spares, and a decent rub on em.

Thanks for the tips Spanky............err I mean Capt. Dan. I read this just in time. Sounds like a plan to me. By the way you and your posts on the other site are solely responsible for my new addiction.

Here they are after the spritz.

They are lookin good NW. Thanks for blamin me for your newest addiction. I guess I have been blamed for worse in my life!

lookin good Wake!!! doin ribs myself today and gonna try that lil tip from Dan also. do a 321 for your first shot, assured good ribs, maybe they might be a lil too fall off the bone for you but you can make changes next round and as you do a few batches tweak them just the way you like them. cant wait for the finish!!!

I wanted to throw a couple fatties on there but there won't be enough room. I think I need a bigger unit. LOL

You can always make room for a fatty, ya just need to find a cheap rack so that you can stack the ribs and free up fatty space

Looks good

If only it were that easy. Between the kids' soccer games and my wife working on her online bachelor's degree (thus requiring me to "keep the kids busy while she is studying" it is really cutting into my smoking time. I have a TON of vacation built up. I may have to take a vacation day to do some smoking . . .
