Well its been a long time waiting but I'm finally smoking butts solo for the first time. After helping my brother in law smoke for family get togethers and just for fun I got the bug and built my own cooker. Now I'm hooked! For the last two months at least every other weekend I've cooked something and was asked by a neighbor to cook for her husbands birthday/Halloween bash.

Here's to hoping I don't have to order pizza for 100 people

Made my own rub out of several favorite ingredients and rubbed the butts down and put them in the fridge over night. Over 63 lbs of meat and smells good so far but still nervous about keeping the moisture in. Temp has been holding steady at about 225 all morning and I put them on a 3:30am.

Also doing my first :grilling_smilie:fatty and stuffed jalapeños for lunch that will go on about 11.

The great thing about doing butts is they are forgivin.  If your temp is to hot - no worries. If the temp is to low - add more fuel to the fire.

Yeah I found that I had to battle it for the first hour or so trying to keep it under 300. I finally shut everything off and it cooled down to about 225 where I've been trying to keep it steady.
 
No doubt about it the most forgivin thing ya can smoke.  I'm  lookin for wards to seeing a pic of the smoker ya created on operation

What you want a pic of? Nothing to do bug watch this thing smoke right now...waiting on lunch to get here so I can start drinking and not feel so bad! :biggrin:

Thanks... Still got some stuff to finish on it but I'm too busy cooking on it in my time off instead of working on it.
 
Been stalled out for over 3 hrs at 158-160..what should I do?
